Much easier than I thought! Pretty good for a first attempt. 💁 I followed this tutorial which was suuuppper helpful. These pics show the process (bottom left to bottom right to top).

I am not paleo but these are DELICIOUS. I used this recipe and will def be using it again… tomorrow (and the day after). I had tried the two ingredient (banana and egg) pancakes before and these are 10,000x better.
I kept the pancakes very small to make them easy to flip and cooked them on very low heat.

Passover is over tonight! Let the carbo loading begin!
I have been thinking about making these for a while now and I’m THRILLED with how they turned out. I used this recipe for the dough and this recipe for the glaze. Also look at my amazing GIF.
(Thank you Travis for enabling this obsession. You are my official go-to-friend for discussing crumb placement).I can’t even describe how good these are… and they look so professional! For the filling I used some homemade berry jam mixed with cornstarch. I ended up cooking these for a bit longer than the recipe called for so they were a tad crispier.
I won’t lie, these are a little tricky to make. There is a definite learning curve but by the end I had the hang of it. I might even look for a big rectangle cookie cutter instead of bothering with all of the measuring etc. And I mean even if they aren’t technically perfect the end result is PERFECTION. I can’t wait to make more with different sweet and savory fillings!
